Coriander & Cashew Pesto

This pesto is great in pasta or even spread onto hot crusty bread straight from the oven – and it’s delicious drizzled over salads

 

Ingredients:

80 g fresh coriander

80 g cashew nuts

2 – 3 cloves of garlic

250 ml parmesan, grated

zest of one lemon

juice of one lemon

125 ml extra virgin olive oil

 

Method:

Place all the ingredients (except the olive oil) in a blender and blitz. Slowly add the olive oil and continue to blitz until the paste reaches the desired consistency. Add more olive oil to make a runnier consistency, if desired.

Summer is for sipping cocktails by the pool, and who doesn’t love a good mojito? Nothing says ‘luxurious tropics’ quite like the delicious, fresh, minty flavours of this much-loved cocktail.  Hailing from Havana, Cuba, this classic drink is a worldwide favourite! Therefore, we have decided to equip you with all the tips and tricks you need to make the most memorable mojitos.

To elevate your mojito and make it extra-refreshing, add a generous dash of soda water to the final glass. The added bubbles will make your mojito light and refreshing. Wanna impress your friends with unbelievably delicious mojitos? Hang around, we’ll show you how!

‘Mint’ to be

The minty flavour in a mojito is essential to get just right. Too much, and you have something akin to breath-freshener with an unpleasant bitterness, not enough and your cocktail loses that refreshing element. A tip to really get those minty flavours and aromas to pop is to put the mint in the palm of your hand and give it a slap, this will release flavours gently without becoming too bitter. Favour fresh mint leaves and forget the bottled essence you can buy!

Keep things fresh with flavour

There’s no end to the flavour combinations with a mojito, you can create your perfect mix with any number of different flavours. Try adding cucumber, strawberries or watermelon to put a spin on the old classic.

As with every ingredient, fresh is always best, especially when it comes to the limes you use in your mojito. Put that bottled lime juice away and use the superior, freshly squeezed juice for a real zing in flavour. To get the lime’s juices flowing better, make the squeezing easier, and to get more of the good stuff out of your limes, give them a quick roll on the counter before slicing them and squeezing generously.

Sugar is a key element to any mojito, but no one wants a crunchy, undissolved mess left at the end of their drink. Keep it clean by making a simple sugar syrup by using equal parts water and sugar and stirring over a low heat until dissolved. Ramp up the flavours by adding mint leaves to the water and letting the syrup steep. While sugar is magical, the secret to making the perfect mojito is all in the balance. Follow the simple ratio of one part lime, one part sugar syrup, to two parts rum and you can’t go wrong.

Stay cool and calm all summer

The earthy flavours of a good Pinot Noir go perfectly with earthy flavours in food. Typically enjoyed as a celebratory drink, champagne is served before the main meal, rather than being used as a meal accompaniment. Therefore, it is important to take some time to pick out the perfect entrees to compliment the sparkling drink. The acidity of champagne makes it great to partner up with a salty snack as if you needed another reason to serve champagne with finger foods. A selection of biltong, nuts, and crackers with cheese will be perfect. Something sturdier, like the crackers, will also give your guests a chance to enjoy the delicious sparkle of the champagne without becoming too tipsy, too quickly.

Cabernet Sauvignon

This rich, full-bodied wine is the perfect accompaniment to red meat, particularly those that are juicy. Definitely a good choice of wine to serve at dinner, and not before. The tannins in this beautiful ruby red offer a refreshing palate cleanser after a bite of meat, think lamb chops, or a rich, flavourful steak. Decanting this wine from the bottle adds an unmistakable touch of class to the meal too.

Comfort factor: Food and wine

If you want to dig into a delicious plate of rich, cheesy comfort food, and have your glass of wine too (because why choose, right?) the perfect wine for toasted sandwiches drenched in grease, or a slice of lasagne baked to perfection, is a glass of dry rose. Whether you choose to have dinner at home on the couch, or at a restaurant, the meal just wouldn’t be complete with the perfect glass of vino to wash it down.

Curry and chilli flavours make for a warm, satisfying meal. Adding the wrong wine to the dinner can ruin both the food and the drink, a balance which is especially tricky to achieve because of the uncanny ability of alcohol to further accentuate the hot factors in the flavour. This may sound like a brilliant dare, but it throws the balance of flavours right out of the window. Opt for a low-alcohol wine and enjoy both your meal and your drink.

If the meal you have prepared contains light, white meats like chicken, pair the wine with the sauce instead, as that will be the dominating flavour in the meal. Similarly, “The best way to pair wine with pasta is to ignore the pasta and pay attention to the sauce”.  Creamy sauces love Chardonnay, a good example being a carbonara sauce. Mushroom sauces, again as mentioned, with the earthy undertones, go well with a Pinot Noir or a Merlot. Pinot Grigio or Verdicchio go well with a slightly more acidic dressing, like a tomato-based sauce, like Napolitana. This may exclude sauces like Arrabiata which is a chilli, tomato, olive oil and garlic sauce. Opt for a wine that will balance the acidity of the tomato, a dry white usually works very well.

The bitter-sweet of it all

Bitter foods, like olives, and cocoa work wonderfully with the right wine. Balance the bitterness of the food with a sweet wine. When you are choosing a wine to serve with dessert, use an entirely different approach. Rather than matching the sweetness of dessert with an equally sweet wine, or a contrasting dry wine (logic figures you need to balance the tastes, right?) the best way to choose your wine for dessert is to keep your wine slightly drier than your dessert is sweet. If you are serving a very sweet dessert, like ice-cream, a Chardonnay will work well. If you are serving chocolate mousse, your dessert will have undertones that are earthy, but bitter, so choose a dry, earthy wine.

South Africa has a wide variety of dishes that are brimming with flavour to tantalise taste buds, and that is why we at Butcher Block are so proud to be part of this diverse nation! If you’re sitting down for dinner chances are you’re taking a photo of it and posting it up on Instagram. Food boasting has become a huge thing in South Africa and around the globe. With every meal becoming an opportunity to take some great shots, it’s a pretty big deal to know how to take food pictures for Instagram.

Search #food on Instagram, and you will see millions of perfect (and not-so-perfect) square-cropped images of breakfast, lunch and dinner, not to mention all those snacks in between. Here are a few of our top tips to get the perfect image that will have your Instagram followers drooling.

Just because you’re taking a photo using your phone doesn’t mean you shouldn’t be thinking about your photograph. Set up your picture. Think about how it will look within the frame. Tap into your artistic eye with this golden ratio and train your mind on how to take food pictures for Instagram. Imagine your image divided into nine equal parts, by two equally spaced horizontal lines and two equally spaced vertical lines. The important elements of your picture should be placed along these lines or their intersections for a fresh energy and immediacy.

We know sometimes being a mom can be overwhelming. This mother’s day take a break from the usual parental duties and treat your mind and body to some health reboots with a well-deserved glass of wine for the whines -  we have found some surprising health benefits from enjoying a glass or two of your favourite beverage.

Wine is known for beating the blues, especially after a long and especially stressful day. Research shows that a glass can even reduce the risk of depression by helping you unwind and relax.  

The anti-aging properties in wine can also work to your benefit. Procyanidins, the compounds commonly found in red wine, keep blood vessels healthy and happy and contribute to a longer life span.

With eyes at the back of their head, a mother needs her eyes to be sharp, and wine can help! The resveratrol in the fruity beverage stops out-of-control blood vessel growth in the eyes. This may help with diabetic retinopathy, as well as age-related macular degeneration.

Did you know that wine also has phytochemicals that raise good cholesterol, while its antioxidants protect the lining of the coronary arteries? One or two glasses of red a day are the optimal amount to help you see this effect.

Butcher Block Hillcrest: Coming Soon

With more and more Durbanites craving a place to wine and dine on delicious food with good company, Butcher Block is answering the call. Soon the quiet town of Hillcrest will be bustling with excitement for a meal (or two, or three) at our trendy, but highly respected steakhouse!

Hillcrest Corner is going to be the next location that Butcher Block gets to call home in the sunny province of Durban. The residents of the upper highway area will be able to indulge in succulent steaks, tasty gourmet burgers and to-die-for desserts right in their own suburb.
